Carol’s Sour Cream Potatoes

6 med potatoes peeled, cooked and mashed slightly 

Stir in:

1 pt sour cream
½ c buttermilk
1 ½ c shredded cheese, extra sharp cheddar
2-3 green onions sliced
1 ½ tsp. salt
¼ tsp. pepper
a little chopped parsley
Paprika to top

Combine all ingredients in a 2 qt casserole dish. Sprinkle with ½ cup cheese and paprika. Cover and refrigerate overnight. Bring to room temperature and bake covered at 350 for 30-40 minutes.
