Beet Jelly

 4 cups beet juice

1/2 cup lemon juice

1 package pectin

Mix above ingredients and boil for 1 minute.  Then add 6 cups sugar and bring to a boil and continue to boil for 4 minutes.  Skim off residue off the top.  Take off burner and add 1 tsp. Almond Extract.  Bottle and seal.

(To get the best beet juice, peel and quarter approximately 5 large beets in 7 cups of water and cook until tender.  Use 4 cups of the beet juice for the jelly.)  

 Enjoy the beets with butter, salt and pepper :)
