Description:Aunt Ann's grandma's peanut brittle is the best! She shared the recipe wirh me at the Lewis family Christmas party.
Ingredients:1 1/4 c Karo Syrup
1 c Water
3 c Sugar
Boil to 242 degrees
Add 2 1/2 c raw Spanish Peanuts (unsalted)
Stir to keep peanuts from burning. Cook to 312 degrees then add:
1 tsp soda
1 tsp vanilla
1/2 tsp salt
2 Tbs butter
Pour out (or use a wooden spoon and spread on pan like you are frosting a cake) on 2 greased cookie sheets and stretch with greased forks until thin. Allow to cool then twist the pan to break into pieces. Takes 40 minutes and fills 6-7 cellophane gift bags.
