Pioneer Bean Soup Mix

Description:I tried this soup with my ham bone from grandpa and my family loved it!   I only had 6 different kinds of beans.   You just need to have 2 cups total of beans.
Ingredients:1c pinto beans
1 c black beans
1 c kidney beans
1 c yellow split peas
1 c black-eyed peas
1 c lentils
1 c green split peas
1 c Great Northern beans

Use 1/4 (or 2 c) of the above beans and add:
7 c water
1 ham hock
1 clove garlic, minced
1 large onion, chopped
1 tsp. chili powder
1-2 tps salt
1 8 oz can tomato sauce
2 carrots, chopped
1 rib celery, chopped

Directions:In clean pint jar, spoon 2 tbs of pinto beans in bottom; continue adding 2 tbs of each bean or pea variety in the order given till jar is full.   Makes 4 pint jars.   Screw on lid; cover with circle of gingham and tie with brown twine.   Put the following recipe on a recipe card to enclose with the gift:
Place all ingredients in a slow-cooker pot.   Cover and cook on medium for 7 hours or till beans are tender.   Or place in stock pot and cook on stove and simmer.   Remove meat from ham hock and return to soup.   Before serving, add juice of one lemon and top soup with grated cheese or sour cream.   Makes 6-8 servings.
