Montreal Chicken

Ingredients:2 large chicken breasts cut in half (use mallet to flatten)
3-4 potatoes
1 onion
1 can diced petite tomatoes
1/2 cup to 1 cup chicken broth (depending on how many potatoes you use)
Montreal Steak Seasoning
Basil
Oregano
Olive Oil
Balsamic vinegar
Parmesan cheese

Directions:Coat chicken breasts in balsamic vinegar.   In a large pan, heat some olive oil (1 - 2 TBL).   Put chicken in pan over medium heat. While they cook, slice potatoes (thinly), and slice onion.   Cook chicken on each side until not quite cooked through.   Remove from pan.

Add more olive oil, put a layer of potatoes & onions.   Sprinkle Montreal steak seasoning, layer again till all potatoes are in pan.   Cook potatoes turning every few minutes for about 8-10 min.

Add chicken broth & tomatoes, season with basil and oregano. Stir everything together.   Add chicken on top.   Cook for 25 to 35 minutes until potatoes are soft and chicken is cooked through.   Before serving add Parmesan cheese.

For variation add other vegetables.
