Cinnamon Banana Chia Seed Pudding

2 c unsweetened coconut milk or almond milk
1/4 c plus 2 tbs chia seeds
1 1/2 tsp vanilla extract
1 banana, sliced
1/4 tsp ground cinnamon
4-8 blackberries, optional

In a sealable glass container, add the coconut milk then chia seeds and vanilla extract. Tightly seal the lid and shake well.  Refrigerate jar overnight or for at least 12 hours.  Serve the chia pudding topped with banana, cinnamon and blackberries.
