1 cup peanut butter
½ cup brown sugar
½ cup granulated sugar
1 egg
1 tsp vanilla
1 tsp baking soda
Mix all ingredients together until combined. Add chocolate chips if desired. Scoop into balls, roughly 16 cookies, and bake on parchment paper at 350 for 6-8 minutes or until they smell done and are slightly browned. They will flatten a little when resting. Let cool on the pan for a few minutes before transferring to a cooling rack. They are soft and fall apart easily. Freeze well when cooled.
