4 Roma tomatoes
1 clove garlic
1 Tbsp olive oil
1 carrot
1 celery stalk
½ tsp Better Than Bouillon
½ tsp cumin seeds
½ tsp paprika
Taco seasoning
medium slice sharp cheddar cheese (~1 cubic inch)
1 cup hot water
1 cup cooked black beans
juice of ½ lime
croutons or tortilla chips
Using a Blendtec or Vitamix, blend the first set of ingredients on high until well-blended and hot (~1 minute). Then add beans and lime juice, and blend on variable speed 1-2 for a few seconds. Garnish with tortilla chips.
The recipe is quite flexible, and you could easily substitute in all sorts of other things.
